Balsamic Vinaigrette
Absolutely my favorite salad dressing, tweaked and perfected by yours truly.
Quincy's Balsamic Vinaigrette:
2/3 cup olive oil
1/3 cup balsamic vinegar
1/2 tblsp. Italian seasoning
1 rounded tsp. fine chopped shallot
1 tsp. Dijon mustard
1/4 tsp. salt
1/4 tsp. pepper
Shaken, not stirred.

Oat/Wheat Pancakes
1 c. oats
1/2 c. whole wheat flour
1/4 tsp. salt (optional)
1 tbsp. baking powder
1 packet Splenda
1 egg, beaten
7/8 c. milk
1/8 c. oil
Let stand for 5 minutes to let mixture thicken. Enjoy with sugar free syrup or sugar free jam.
Being able to eat like this is one of the reasons why I switched from Atkins. Sure beats pancakes made out of crushed pork puffs.

Ramblings about Yogurt
I actually prefer the taste of homemade, however because we both work full time jobs we have had to cut some things to streamline. We buy Source with active bacterial culture, low fat and made with Splenda. Lots of flavours. We've gone from having 2 horses, 6 pigs, a dozen or so rabbits, 2 dogs and 5 cats, to no animals at all. From the Harrowsmith lifestyle to living in town with only a garden to tend and within walking distance from most things. We found the "simple" life not so simple so we downsized and find it easier to rent horses when we feel like riding, buy meat almost as cheap (sometimes cheaper) than we can raise it and pet other peoples dogs . Life is easier when we don't have to mend fences, chase down a runaway horse, shock treat a well, pitch hay, feed pigs, dry fruit, make yogurt, etc. etc. Sure we had fun. Do we miss it? Sometimes. But, now we have more time for each other, to look after ourselves, and pursue peace.
